Smoked Bourbon Barrel Pepper

A spicy favorite in Mexican, Latin American and Tex-Mex cuisines are smoked chile peppers - most notably "Morita" Chipotles, premium "Meco" Chipotles and the hard to find Pasilla de Oaxaca Chiles - and these have long been coveted for the deep rich smoky flavor they provide. In recent years, there has been an explosion in the amount of quality smoked salts available - usually cold smoked over alder, apple, cherry, hickory or mesquite wood.
